Waris are situated in the Cote de Blancs (Avize) and utilse lots of 1er Cru Chardonnay in their cuvee. Bertrand Waris and his wife, Virginie, took over the vineyard here in 1996 and initially sold their grapes to several of the well known Grand Cru houses, but in 2003 they decided to vinify their grapes themselves and created the label ‘Waris & Filles’.
This Brut Heritage is made from 60% Pinot Noir and 40% Chardonnay. Half of the production undergoes a malolactic fermentation to give extra roundness to balance the natural vivacity of the wines. Of extra note is that the wines are aged for 15 months in bottle in vaulted cellars dating back to 1730 prior to final disgorging and bottling.
