In Paul Morley’s seminal 2003 book on the history of pop music ‘Words & Music’ he weaves a narrative that discusses what popular music would look like if pop music’s heritage was dirived more by the works of Steve Reich, John Cage and Eric Satie than that of Presley, Lennon and McCartney. The music of his parallel universe would be no less poppy and consumable, just very, very different. It’s not very difficult to apply this same logic to this unique wine. It’s no less layered than fine Meursault, no less complex than a great Napa Chardonnay and no less delicious than a very fine white Rioja. And yet it is absolutely none of these things.

Ximénez-Spínola is a winery based in Jerez, founded by Philipe Antonio Zarzana Spinola in 1729. The winery is unique as no other family owned winery devotes itself exclusively to just producing products from Pedro Ximénez. After nearly 300 years, the winery remains in the hands of the family with the same dedication to the soleras system, making small production expressions of sweet and dry styles of the Pedro Ximenez variety. The 2015 Fermetacion Lenta is a wine with elements of fine old dry white wine with whispers of sherry richness. If the first taste is a shock the following tastes create a love affair.

Viticulture
Pedro Ximenez grapes are left to over ripen on the vine for 21 additional days to the conventional harvest. Harvested by hand and transported in 15kg boxes to prevent damage to the fruit.

Winemaking
Soft pressed and fermented on the skins in French Oak barrels (225 and 300l). To ensure slow fermentation, 30 litres is added to the barrel each day which means it is fermented totally dry. The musts are kept on the lees with soft battonage for six months in barrel.

Tasting Note
A clean gold colour with green highlights. The nose is marked by the French oak, which accentuates the raisin and prune aromas. A soft palate despite the high alcohol and a pleasant finish of ripe fruit and oak. Of course there are suggestions of sherry but this is unmistakably a fine table wine.

Food Matching
First off this wine is just beautiful to enjoy on its own. Such is the complexity and depth it needs no dish to enhance it. However, it would be incredible with all white meats, hot and cold. It’s rich enough to enhance cold cuts and structured enough to match rich creamy sauces. For a crescendo of flavour enjoy with smoked salmon blinis.
